Lazy Man's Omelet
I woke up this morning with a bit of a cold, so I decided to be lazy when it came to cooking breakfast (plus I'm not much of a chef to begin with.)  I scrambled up two eggs with celery, bell peppers, cherry tomatoes and onions.  I basically just gathered all the spare vegetables we had around the house that I wanted to use up before they went bad.  Once scrambed, I topped with avocado and a little salt and pepper.  The best part was definitely the avocado.  It was really good and filling, and is definitely a lazy man's omelet in my opinion.  I've never been good at flipping an omelet in the skillet, and I always end up browning one side too much.  This was much, much easier.


 
 

Primal Scotch Eggs
This next recipe is one I've made quite a few times.  I got it off Mark's Daily Apple, and it is completely paleo.  It is pretty easy, and it only requires 2 ingredients.  Does it really get any better than that?!  I usually end up making them the night before because it's just more convenient for me.  Shane is really bad about getting up and going to work without eating breakfast, so this worked well for him to just throw in a tupperware bowl and heat up in the microwave the next morning.     



This last recipe is one that my mom has been making for as long as I can remember, but I revised it just a bit last year when I started eating paleo.  This recipe takes a bit of time dicing up vegetables and ham, but it's still pretty easy.  It's one of those really convenient meals you can heat up and eat the next day for breakfast or dinner.  Quiche is great anytime, and you won't even miss the crust...much.  = ) 
 
 
Crustless Quiche
6 eggs
1/2 pint heavy cream
1/2 onion diced up, 1 small bell pepper diced up
9 oz package of ham diced up
8 oz. sharp cheddar cheese shredded
Put a small sliver of butter on top of each muffin.
Oil muffin pan with olive oil.
Fill each muffin pan about 1/2-3/4 full with mixture.
Cook 20-25 minutes or until golden brown at 375 degrees.

Summer in December

I woke up again this morning to snow in Memphis!  It also snowed the day after Christmas, but I had to work so I didn't even get to enjoy it.  And by snow, I really just mean a few flurries.  Nothing stuck to the ground this morning, but it was still nice being off work, lying in the bed and watching it through the window.  It looks pretty, and it might even be fun for a minute, but I am longing for summer again.  It's not that I mind the cold.  I actually like it and what comes with it (snowskiing), but I'm ready for the beach, the sun, pina coladas and all that good stuff.  I think my love of summer must have inspired my outfit choice today.  It's 33 degrees outside, but I just had to throw on a beautiful coral colored top.  I put on a scarf with it, so that counts right?  Totally winter ready.

After I ran a few errands this morning and did a little shopping, I went by Plato's Closet to sell a few items that hadn't sold yet on eBay or PoshmarkI always use eBay and Poshmark first because you get much more money for your designer clothing.  I save any items I may have from Old Navy, American Eagle, etc. for Plato's Closet.  You basically get just a little more than you would at a yard sale.  I took them 5 items and got $11.90.  Big money.  It's all about the Benjamins baby or in my case the Washington and the Hamilton.





























When I was taking pictures today and getting ready to type up this post, I didn't notice that
pretty much every picture has something to do with summer.  It was my self counscious, I promise.  = )  My husband and I moved downtown a little over 4 months ago so we are still trying to get settled in and get more furniture for our screened in porch.  At our old house, we just had one tiny slab of concrete for our back patio, so we've been buying a lot of outdoor furniture to furnish the patio and the porch at our new house.  This is what we have so far.  It's really coming along.  All of the pieces you see below are from the Ciudad Modular Collection at Pier One, and I got all of the pillows on eBay for free with my $120 in eBay bucks I had saved up.  I got a lot of Pier 1 gift cards for Christmas though, so they will definitely be put to good use just as soon as they mark their outdoor furniture on sale!  Have a great weekend and don't forget about the giveaway.  It ends Monday, December 31 at 11:59pm CST.

January Wish List

I love shorts; I always have for as long as I can remember.  I am that weirdo person who will wear shorts year-round, and no I do not live in Florida.  I've really been wanting a faux leather pair, and I love the ones below with the elastic waistband.  I think they could easily be worn casually or even dressed up.  My favorite clothing colors right now are white, ivory and burgundy.  I love these colors in winter time.  Snowbunny anyone?  Plus the cut of the pants is dressy but still tomboyish.  The style of this skater skirt is so flattering, and the deep rich color is just perfect.  My other obsession is capes or ponchos.  I remembered wearing a poncho about 10 years ago.  Thank goodness they came back in style and are much cuter than they used to be!  I think I looked like I was wearing my mom's throw blanket off the back of the couch.  Oh well, I've definitely worn worse.  I also added a picture of my outfit today below.  The Ann Taylor gator was last seen here.  This is the silk camp shirt off my December Wish List.  I ended up getting the top and pants off that wish list, and found an almost identical pair of Banana Republic wedge boots for about 1/5 the price on eBay.  Can you tell I love this plum or burgundy color?  And am I the only one who can't help smile when I say burgundy because I think of Ron Burgundy from Anchorman?  Oh well.  Happy Friday, and don't forget about the giveaway!  It ends on New Year's Eve at 11:59pm.  Also, my SIL is doing a giveaway here

December Giveaway!

I figure there is no point in writing about anything else but the giveaway in this post since most of you will probably just skip to the good part anyways.  What, I actually write stuff on this blog?!  I know what some of you are thinking.  I thought she just posted a lot of pictures of herself.  You're probably both right.  I know this is the second time I've worn this poncho  in a post already, but I LOVE it so deal with it.  = )  The gator I'm wearing is from a couple of years ago, but I love it.  I ended up calling the 800 Banana number once it went on clearance to have them locate it so I could do a send-sale.  I finally found one in Arkansas.  Yes, it was that serious.  They shipped it to me for free, and the total was less than $10.  It even has 3 snaps in the front to take it off so I don't get crazy staticy (pretty sure that isn't a word) hair when pulling it off over my head.  My shoes are from a few years ago when the BCBG store in Nashville was having a huge sale.  These shoes have been through a lot.  I just got them back a couple of weeks ago from the cobbler from having them resoled, reheeled and redyed.  Still cheaper than buying a new pair!  Plus it was almost a year long search just to find the perfect nude pump.  One last thing, and then we'll get to the good part.  I love, love, love these jeans.  They still have them left at Revolve but are sold out pretty much everwhere else.  They are cropped but are the perfect length for a 5'2 person like me.  I snatched these up for about $60 on eBay, and I've seen quite a few other pairs like them on there too.

New Year, New Dress

Now that Christmas has come and gone, it's time to get in gear for New Year's Eve.  I didn't go out last year for New Year's Eve, so I'm really looking forward to it this year (if I can stay awake that long.)  My bed is usually the only thing I'm snuggled up next to at midnight.  I might even have to go home, take a nap, and set my alarm for 9:00pm to get up, get ready and then go out.  Sad but probably true.  The older I get, the more I convert to a morning person, and I'm not happy about it one bit!  Spoken like a true grouchy old lady.  As usual, I'm slacking on finding the perfect dress for that night.  The first one is the splurge I would love to have, but my wallet is still recuperating from Christmas.  I think I could actually get a lot of use out of it, but I'll probably end up with one of the more affordable versions below.  I need to be hitting the gym like yesterday if I'm planning on getting in dress #2 or #4.  I'm still debating on going out of town to Nashville for the weekend and New Years Eve or staying in town and going to a party.  Does anyone have any suggestions if you're in the Memphis area?  I hear that the Peabody New Year's Eve Party is awesome.  5 more shopping days to find your outfit to ring in 2013!

Christmas Photos

I hope everyone had a wonderful Christmas!  I had such a great time visiting all of my and my husband's family.  It was so nice having so many young nephews, neices and cousins at all of the get-togethers this year, and it made for a really fun and special Christmas.  If you know anything about my husband, you know that he has A LOT of family.  Growing up I've always had 2 places to go.  1.  My mom's parents' house.  2.  My dad's parents' house.  Throw my husband Shane's family into the mix, and now we've got 8 places to go for Christmas.  It's tough sometimes trying to balance visiting with everyone and also having time to yourself to relax and enjoy the holidays, but it's so worth it.  We ended up making it to 6 places this year over the course of 4 days.  Now it's time to hit the gym tonight.  That scale was not a pretty site this morning.  There will be a lot of running in my future. 
 
I'm back at work today, but it's really throwing me off having to work the day after Christmas.  How am I supposed to do after Christmas shopping when I'm at work??  That's what lunch breaks are for I guess. 
 
If you're from Memphis, you know we don't get snow here very often, and when we do it isn't much, but we got some snow today!  It's probably only an inch and will be gone by lunchtime, but I'll take it!  Also, I will warn you that I love to take pictures as evidenced below.  Happy Hump Day!

This Week in Photos










Not So Lazy Saturday

Lora, Natalie and I met up this morning at 9:00am to run at a park in Millington. We did a little running, a little walking and a little talking, but we did 5 miles total! It's amazing how quickly the time flies when your working out with friends.

I usually don't eat before I workout, especially if I workout early in the morning. For some reason it always makes me feel sick, so I was famished when I got back home from running. I know I just ate there last night, but I went to Tugs again. I had some eggs and bacon, and they have the best bacon. You know how some people judge a restaurant on their steak? Well I judge restaurants on their bacon. For my birthday this year, one person actually gave me a ziploc bag of bacon. Yes, these are the things that dreams are made of.

After my bacon coma I decided to go get a pedicure at Nail Bar. I usually get neutral colors and even debated on getting red this time. I got red at Thanksgiving though, so I wanted to do something different. I settled on something sparkly since it's Sparkle and Sequin Season. The color is called Her Majesty's Secret Service by OPI. It is a nice bluish gray sparkly color, and is even prettier in person. I like it so much I wanted to get a manicure too, but they were already booked up for the afternoon. Maybe Monday I'll try to squeeze it in. If you live in Memphis, you should definitely check out the Nail Bar on the island. Make sure you make an appointment though because they fill up quickly. You can sip your choice of wine or a mimosa while enjoying a nice pedicure or manicure. They always do a great job and are so nice there.

Downtown Dinner Date

Shane (my better half) and I went out to dinner tonight at Tug's downtown.  I love that place, and am a little embarassed to say that I eat there at least twice a week.  It's in my neighborhood, so sometimes we even drive the golf cart there!  It doesn't get any better than that (in Shane's opinion.)  = )  We shared a steak, and I have to say it was one of the most tender steaks I've had in a long time, and not to mention it is so much cheaper than going to the store and buying and cooking our own.  I was a little bored with my pencil skirts and dress shirts all week, so I just had to switch it up a little tonight for a date.  (Is it considered a date after you've been together for over 8 years?)  We had 75 degree weather a few days ago, but now it's in the 40's this week!  Brrrrr.  Since it was just a tad too cold for shorts, I had to at least break out a short skirt.  If you know me, you know that if it's at least 50 degrees outside I will most likely be rocking a pair of shorts.  Recently inspired by Megan (check out her incredible blog!), I've been looking for some nice cozy sweaters, and was so excited when I found this oversized poncho one.  I'm debating on purchasing it in the beautiful pomegranate color too.  On another note, I have got to say that I am so excited that Christmas is almost here!  I really miss my family (even though we only live an hour apart), and especially my nephews!  They are just the sweetest and most fun little boys ever (though I am probably biased.)  You can visit their lovely mom Lindsey's blog here.  My yorkie Spike is an attention hog and wanted to meet everyone out in blogland, so you'll see him below.  Have a great weekend!!!
